Great Saint Bernard Pass, an important link between Italy and Switzerland since the Roman Empire.
The village of Saint-Oyen (1372 m. altitude), a strategic area between the Alpine Pass, which from ancient times allowed the transit of people and goods to Brittany and Germany, was born along the road that leads to it, the famous Via Francigena.
Due to its location, Saint-Oyen benefits from a particularly dry climate thanks to the winds from the Great Saint Bernard mountain and the “Menouve valley” on the north side.
These particular conditions have allowed to take root of a lush and spontaneous flora perfuming the fields of herbs such as thyme, savory, cumin, juniper and have favored from a gastronomic point the seasoning and the preservation of hams and sausages.
